Ep 23 Sheltering Well--What's That Mean to You?

As the "elderly" parent--Mark is three years my junior--I'm learning how to shelter-at-home and trying to do it well. Not always successful. I'm getting reprimands from my kids: "MOM, WHERE ARE YOU GOING??"

I woke up today remembering the old hymn: "Shelter in the Time of Storm." I can hear my mom singing with a long pause on the first "Oh" of the refrain: "OOHHHHH, Jesus is a Rock in a weary land, a weary land, a weary land. OOHHHHH, Jesus is a Rock in a weary land. A shelter in the time of storm."

Not my favorite tune but true enough.

Today's recipe is Kitchen Sink Frittata!

Saute slivered red onions in oil

Add leftover cooked sweet potatoes and poblanos

Chop and add the 3 leftover cooked sausage patties

Add 1 cup of fresh spinach - Cook all til soft

Whisk together: 3 eggs, 1/3 c egg whites, 1/4 cup almond milk, and 1/4 t. dry mustard, and pour over.

Pile on favorite cheese. I used Mozarella.

Sprinkle with Trader Joe's 21 Seasoning or any dried herbs

Bake at 350 for 20 minutes

Voila!
