A word from Andree about Jerk Chicken! (YUM!)

Jerk Chicken
Some background -  if you come to my house you will be fed and usually, it will be a meal. Here's a quick recipe for Jerk Chicken. Jerk is a method for seasoning your chicken. The secret is the spice mix which must include pimento (aka allspice). The jerk spice mix is usually salt, pepper, pimento, garlic, onion, pimento, thyme, scallion, ginger, scotch bonnet or habenero peppers (there must be heat). Season a whole chicken or parts with this mixture, then let it sit for at least an hour. The longer it sits the better. In a pinch a bottled jerk seasoning will do. Then bake...I like to broil initially for 5 minutes to get a good char then complete on 350 until cooked - approximately 30 - 40 minutes. Serve with white rice and salad. That's a hearty meal that will have your guest begging for more.
