Ep 24 A Legacy of Connection and Ignoring The Naysayers in Your Head with Lisa Lewis
Lisa is one of the most encouraging and smart people you could know and follow. Whenever I need reminding that God is in control, that He sees me, and that I'm here for a purpose, I call Lisa!
Here you go:
(aka Mrs. Jeffrey’s Chicken)
2 c. seasoned bread crumbs
¾ c. grated parmesan cheese
1 cube of butter, melted
Salt and pepper to taste
1 T. dried oregano
2 cloves minced garlic
7 boneless skinless chicken breasts
Rinse chicken breasts and pat dry. Cube the chicken into pieces about 1” x 2” (approximate—even size helps even cooking)
Measure coating ingredients into a bowl.
Put cubed chicken into a large gallon Ziploc style bag; pour melted butter over chicken pieces. Add coating ingredients into bag; close and shake to cover the chicken with the coating.
Spray a 9 x 13 casserole dish; pour coated chicken into dish, spread around to evenly cover the pan with the coated chicken.
Bake at 350 for approximately 25 – 30 minutes. (poke holes in the center to see if juices run clear)
